1. Basic Definition of Vacuum Freeze Dryer
A vacuum freeze dryer is a precision dehydration and drying equipment developed based on the physical principles of low-temperature freezing and vacuum sublimation. Different from traditional processes such as hot air drying, sun drying and high-temperature drying, the freeze-drying process is conducted in a low-temperature and oxygen-free environment without high-temperature damage or component oxidation. It is currently recognized as a high-quality material drying technology in the industrial and food processing fields, specially suitable for the drying and fresh-keeping processing of various heat-sensitive and easily oxidizable materials.
2. Core Working Principle and Process of Freeze Dryer
The entire vacuum freeze-drying process is a physical change without chemical reactions, which maximally protects the original properties of materials. It consists of four standardized operation stages:
① Pre-freezing Stage: Materials are quickly frozen at low temperature to completely solidify the free moisture inside into ice crystals, fixing the organizational structure of materials. This avoids deformation, collapse and nutrient loss during the drying process, and fully retains the original shape and effective components of materials.
② Vacuum Pumping Stage: Extract air from the freeze-drying chamber to create a high-vacuum and low-pressure environment, which greatly reduces the sublimation critical point of moisture and creates exclusive physical conditions for ice crystals to sublime directly from materials.
③ Sublimation Primary Drying: Under a constant low-temperature and vacuum environment, the ice crystals inside materials turn directly into water vapor without melting into liquid state. The water vapor is captured and collected by the condensation system, removing more than 90% of free moisture from materials, which is the core link of the freeze-drying process.
④ Analytical Secondary Drying: Through precise gradient heating and analysis, the bound water inside materials is completely removed to reduce the material moisture content to an extremely low level. It fundamentally prevents mildew, dampness and deterioration, realizing long-term stable storage of materials.
3. Core Advantages of Vacuum Freeze Dryer (vs. Traditional Drying Processes)
① High Activity and Nutrient Retention: The whole-process low-temperature and vacuum operation avoids high-temperature decomposition and oxidative deterioration. It can fully retain vitamins and active nutritional components of materials with extremely low loss compared with traditional high-temperature drying processes, which is highly suitable for the high-quality processing of high-end food, tonic products and fine chemical materials.
② Complete Shape and Excellent Rehydration Performance: Adopting the in-situ ice crystal sublimation dehydration process, materials will not shrink, crack, discolor or collapse, and the original color and shape can be fully restored. The freeze-dried materials have a uniform pore structure and can quickly rehydrate to a fresh state when encountering water, ensuring excellent product appearance and use experience.
③ Long Storage Period Without Additives: The extremely low moisture content combined with the vacuum and oxygen-free environment effectively inhibits the growth and reproduction of bacteria and microorganisms. Long-term fresh-keeping storage can be realized without preservatives, greatly reducing the costs of warehousing, cold chain and fresh-keeping, and adapting to the long-term storage, transportation and sales of materials.
④ Wide Application and High Automation: The equipment is flexibly applicable to processing in food, chemical, agricultural and other industries. It supports fully automatic intelligent operation with accurately controllable parameters, simple operation and stable performance, meeting the full-scenario demands from small-batch trial production to large-scale mass production.
4. Main Application Scenarios
Food Industry: Processing of freeze-dried fruits and vegetables, freeze-dried aquatic products, prefabricated food ingredients, bird's nest, cordyceps, ginseng and other tonics, as well as freeze-dried instant food.
Industry and Agriculture Fields: Drying of new material powder, treatment of fine chemical raw materials, fresh-keeping of agricultural seeds and breeding, and intensive processing of characteristic agricultural products.
